Mystic and Bewitching
This wine presents a complex nose with a large range of aromas, with ripe fruits and roasted notes tinged with a subtle chocolate hint. The full-bodied mouthfeel is similar to the nose, with silky tannins. It is predominated by black cherry and liquorice, and the final expresses the flintstone terroir with a hint of freshness which predictably leads to another sip!
Hecate will bewitch you with dishes cooked in sauce such as the traditional beef bourguignon, an exotic tajine with turnip and dates, or also ox cheek with carrots and chanterelles. If possible, pour it out in a carafe an hour before serving it. This wine can also be kept from 7 to 10 years.

Wine-making : Maceration gently, in infusion during 3 or 4 weeks. Ageing in 2-3 year old barrelsof 600 liters during 12 months and then, taken in mass in stainless steel tank durinf 4 months. The ageing like vinification are without suffering. The wine has neither been spliced nor filtered.
